Chicken is an integral part of our regular meal; be it summer or winter or even rainy season chicken recipes can not go wrong if a little care is taken while cooking. Super easy to cook and boiling part takes hardly 20 minutes if the meat is not marinated beforehand. Marination would cut the boiling process by half of its actual time. So any quick meal can be easily charted out without any such fat preparation. Herbs are exquisite friend of Chicken; be it hotpot recipe or barbecued or even for curried ones. This time I played safe and introduced a fresh dish into Cooksocial’s kitchen ‘Dry Chicken with Thyme’. Thyme did wonders for the recipe and I did little to make it perfect. However I believe my culinary skills are just fine to extract the best flavor out of simple ingredients:)
Winter is a special season. Thyme, Rosemary, Basil, Oregano – these herbs can be well grown in your home environment. Just a little care and they will infuse sublime aroma into recipes like Dry Chicken with Thyme. Unlike Methi/Fenugreek leaves, small portion of Thyme is more than enough to inject the special touch. Too much thyme can make it bitter; so be careful while throwing thyme into the recipe. Pouring 1/2 cup of regular milk ( toned milk can be used as substitute) into it, would extract a natural earthy flavor from the delicacy.
- 750 gms Chicken with bone (cut into medium pieces)
- 2 medium onions chopped
- 2 tbsp Ginger paste
- 1 tbsp Garlic paste
- 1 and 1/2 medium tomatoes chopped
- 1 tsp cumin seed
- 1/2 cup regular milk
- 2 tsp thyme leaves
- 1pinch of turmeric
- Salt to taste
- 3 tbsp Healthy Soybean oil
- 4-5 green chilies cut into 2 halves middle wise top to bottom
- 1/2 cinnamon stick smashed
- 3 green cardamoms
- Pinch of ground garam masala (cinnamons, green cardamoms and cloves)
Pour oil into pan and place the pan on a medium flame.
Throw cumin seeds, smashed cinnamon,cardamom and let them splutter.
Add green chilies and chopped onions. Saute till the onions turn fairly brown and leave hot aroma.
Time to add ginger and garlic paste. Stir and mix everything well.
Tomatoes go into the spice mix, saute till everything gets together.
Chicken pieces are the very next thing to include. Coat the pieces with mixed spices.
Sprinkle thyme on top of coated chickens. Pour milk and toss everything well.
Next goes turmeric and salt. Stir well.Sprinkle ground garam masala.
No need to add water as the milk will serve the purpose. Chickens gets to boil in milk instead of water.
By this time thyme will leave its aromas and you are just going to put the lid on. Keep the flame low and wait for next 15 minutes.
Open the lid to check if the chicken has taken a creamy texture or not and we want the gravy to be thick enough that it looks like a dry preparation.
I am pretty sure 'Dry Chicken with Thyme' is ready to serve with hot rice..:)
