Fried Baby Corns with crushed Split Peas2014-12-29

In India, especially here at Kolkata, Deep frying refers to preparing the batter with Besan or Bengal Gram Flour but for me Besan or Gram Flour is no no ingredients for my recipes. I know there are ample fans of deep fried vegetables ( capsicum, green chillies, Brinjal etc.) in Besan all across Kolkata, India but I do not like the heavy touch of Gram Flour personally:) So I tried to explore deep frying with something else. Here I used crushed Split Peas in order to produce the thick batter for frying Baby Corns.
Baby Corns are like pale yellow small corn pieces which taste sweet on their own and this is the tricky part while handling Baby Corns for your recipe; addition of Baby Corns in any dish inevitably guarantees a sweet touch to the recipe and we do not really destroy the authentic touch of Baby Corns while we intend to use it even if in deep or shallow frying. I am not that fond of deep frying concept as it suggests the idea of pouring lot of oil into the recipe. In order to avoid this, I boiled the Baby corns I bought from my local market and believe me it works wonderfully well; no need to emerge sweet babies into sumptuous quantity of oil. The outcome is crispy fried Baby corns and a rich taste of crushed split peas is intact throughout every bite I made:)
- Baby Corns - 250 gms
- 6 tbsp all purpose flour
- 5 tbsp crushed split peas
- 1 tsp chilli flakes
- salt to taste
- 1 tsp kashmiri red chilli powder
- 6-7 tbsp Sundrop Heart Oil
- 1/2 cup water for batter
- water for boiling
Prepare batter with all purpose flour, crushed split peas, water, salt , kashmiri red chilli powder and chilli flakes. keep the thick batter aside.
Put the baby corns on boil. It helps to get rid of germ also (if any).
Throw the boiled baby corn pieces( 1 entire baby corn is cut into 3 equal pieces) into the batter and coat them well with batter. Keep it intact for next 5 minutes.
Put oil into Kadai and bring to high flame at first. Add baby corns ( 7-8 pieces at a time) and toss them well until they get turned into golden brown colored fry. Repeat this step for all the baby corns and drain the oils from Baby Corns as much as possible.
Crispy fried Baby corns are ready to serve as a Quick Snack Dish in Winter evening. Chilli Garlic Sauce is a perfect condiment for the recipe.
