Fried rice is just one of those succulent dishes which does not need any particular introduction. Every kitchen comes up with its version of Fried Rice. From the name itself we understand ‘frying’ is the integral part of the preparation. On top of that right choice of vegetables along with a couple of spices make Mixed Vegetable Fried Rice a wholesome main dish which can be served on its own or else with any dry side dishes. In my earlier post I explained the art of cooking Khichdi , a different take on rice dish. Benagali Pulao/ Sweet Pulao is another variation of rice preparation but these are remarkably different from Mixed Veg Schezwan Fried Rice in terms of origin, flavor, aroma and ofcourse taste. Cooksocial likes to make life simple yet enriching as Kitchen is considered to be the heart of any home. This recipe requires a good amount of time and effort in deciding the vegetables to go for. However, pretty regular veggies such as carrots, green beans, peas (frozen or fresh), onions, cabbage etc. will be the basics to start with. Any seasonal vegetable like cauliflower/broccoli does not need separate welcome into the dish.

Mixed Vegetable Fried Rice primarily derives its flavor from chinese spices; to be more precise schezwan powder is the pillar of the recipe where as fine long grain Basamati/ Dehradun rice is the best ingredient to cook the recipe to perfection. I performed regular boiling process while preparing the rice. Thereafter frying vegetables along with spices and finally mixing everything altogether requires very little almost no effort. It is a delight to give them a good mix as you are continuously imbibing the authentic aromas coming out from frying pot during the pretty long process:) By schezwan powder, I try to mean ground Chinese sichuan pepper along with star anise, small amount of red chili, salt, sugar, cinnamon, black cardamom and vinegar. These spices should be toasted earlier if procured whole and then make a a smooth paste in your mortar. I enjoyed cooking my mix veg schezwan fried rice thoroughly and the entire family already looking forward to their second treat ! Try Mixed Vegetable Schezwan Fried Rice sooner. Ingredients

  • 250 gms of Good Quality Basamati
  • 1 and 1/2 carrots finely chopped
  • 10 green beans finely chopped
  • 2 small onions finely chopped
  • 1/2 cup of frozen green peas
  • 2 tsp ginger paste
  • 2 tbsp vegetable oil (for frying vegetables)
  • 2 tbsp vegetable oil (for stirring rice with vegetables)
  • 1/3 rd medium sized cabbage chopped
  • 7-8 Black Peppercorns
  • Schezwan powder - 3 tbsp
  • Salt to taste
  • 8 green chillies cut top to bottom mid wise with seeds

Method

Step 1

Boil the rice and set aside. The rice needs to get dry before tossing them with vegetables.

Step 2

Take a Pan and put it on medium flame. Pour oil.Wait until the oil gets fairly warm.

Step 3

Add onions and toss till they turn light brown. Time to add ginger paste and mix well. Give it a little while until the earthy flavor of ginger comes out of the pan.

Step 4

Throw in all sort of vegetables mentioned above. Toss everything well. Sprinkle salt before putting the lid on for next 5 minutes. We need to wait this much to half boil the vegetables. Do not spoil the veggies by stirring them continuously; instead toss as and when possible to let them dry after opening the lid.

Step 5

Perfect time to sprinkle schezwan powder (1 and 1/2 tbsp). Coat the vegetables with the spice mix properly.

Step 6

Take another pan. Add rest of the oil. Trow in black peppercorns. Wait for the spluttering sound.Add rice onto it. Toss the dry rice well before letting the vegetables in the pan.

Step 7

Mixed Vegetable Schezwan Fried Rice is almost done if you see the rice and vegetables are balanced throughout the recipe and keep it on low flame for next 5 minutes to infuse everything together.

Step 8

Hot and schezwan powder rich mix vegetables with rice is ready to go onto your Lunch/Dinner plate from Cooksocial's kitchen:)
