My family and friends are all fond of Paneer (Indian Cheese/ Cottage Cheese). There are innumerable types of cheese could be found all over the world. Nowadays in India, we can avail a list of cheese types especially Cottage Cheese, Mozzarella Cheese, Parmesan Cheese, Cheddar Cheese, Feta Cheese and many more. My inspiration for Shahi Paneer with Cashew Nuts is a tv show hosted by renowned  Chef Vikas Khanna. I followed the recipe almost as it is and at the end poured my own ideas as usual to make it close to my heart and soul.

We all know Healthy recipes are the best recipes to run after  but we can not really leave it late to explore Cheese World. I started to prepare the awesome dish Shahi Paneer with Cashew Nuts just a year back and now it is hot favorite among all my friends and family members who have tasted it so far. I recollect every now and then how I took my step to accumulate all ingredients needed for the recipe and gone through a terrible situation because I was about to produce the restaurant styled Paneer recipe from scratch and without any prior strong knowledge. In addition to this, Chef Vikas Khanna is a topmost Chef of our country and he prepared the dish with a special elan. At last I grew up the guts and tried the new kind of Paneer recipe on my own. Take in small quantity at a time to avoid Cholesterol related issues and enjoy the journey of making and eating delicious Shahi Paneer with Cashew Nuts with Hot Chapati or Rice – anything and everything you relish.

 

Ingredients

  • Paneer(India Cottage Cheese) - 500gms cut into medium square pieces
  • 25 ml Fresh Cream
  • 2 Medium onions
  • 2 tsp of garlic paste
  • 2 tbsp of ginger paste
  • 1 big tomato chopped
  • 3 tbsp Sundrop Heart Low Cholesterol oil for spicing up the recipe
  • 3 tbsp Sundrop Heart for tossing Paneer pieces
  • 4-5 tbsp Cashew paste
  • 1 and 1/2 tsp cumin seeds
  • 3- 4 tsp coriander paste
  • 4 green chillies
  • 2 tsp Kashmiri Red Chilli powder
  • 1 tsp of Kasuri Methi ( Dried Fenugreek leaves)
  • Salt to taste
  • 1 small cup of water
  • 30 gms of green peas either fresh or frozen
  • 2 tsp Indian powdered hot spice ( cinnamon, cardamom and clove)
  • 2 tsp of turmeric powder

Method

Step 1

Toss Paneer pieces into hot oil carefully just for a few minutes to coat them in oil and turn them in very light brown color. Keep them aside.

Step 2

Add cumin, coriander, chillies, tomato, ginger and garlic paste, onion into the same container containing hot paneer flavored oil. Saute them till they get coated in oil and leave strong smell.

Step 3

Take the spice mix from oil and smash them altogther into a mixer grinder.Make a smooth paste out of all the ingredients.

Step 4

Pour the smooth spice mix into the same container. Add small amount of oil if needed. Wait till the mixture leaves oil on top.

Step 5

Add cashew nuts paste and stir continuously.

Step 6

Add salt, kashmiri chilli powder and turmeric powder. Toss evrything well.

Step 7

Add Paneer in the total mix and coat them into the spices evenly.

Step 8

Add fresh cream and give it a final stir. Time to throw the frozen peas into the Kadai.

Step 9

Sprinkle Garam Masala powder/ powdered hot Indian spices from top. A slow stir is again needed to get everything together.

Step 10

Take Kasuri Methi between the palms of your hands and sprinkle them on top. No need to stir , just put the lid on and the beautiful smell of Kasuri Methi get absorbed into the Shahi Paneer with Cashew Nuts recipe.
