Well known vegetables are rare in Summer time. Lack of various vegetables such as cauliflower, cabbage, sweet potato, spinach etc. compel us to think further what to cook. One can not offer the same dinner or lunch day after day and have to experiment with available fresh veggies found in market during summer. So you may decide to go with Snake gourd vegetable which is a sweet vegetable in terms of flavor and add a whole lot of greenery to your recipe. This is popularly known as Chichinga among Bengali people.

Head of Rohu fish is a very delicious part of the entire fish body and well go with lot of vegetables such as Mong toi ( Pui saag) , Pumpkin, Aubergine, long beans but snake gourd vegetable is a delectable choice over them. It is upon you to use rohu fish as a non vegetable ingredient in the recipe, otherwise healthy vegetable recipes could be obtained well with snake gourd vegetable. A generous amount of other veggies like potato, aubergine or even long beans are welcome but as we all know to much can actually destroy the real authentic taste of vegetable recipes. These baby seeks a lot of attention to details while recreating traditional wonders.



  • 3 medium snake gourds cut into very small half circles
  • 1 big onion sliced
  • 1 tomato cut into medium pieces
  • 3 tsp of cumin seeds
  • 7 cloves of garlic
  • 1 and 1/2 tsp of ginger paste
  • 2 big potatoes cut into small pieces
  • 1 tsp of turmeric powder
  • 5 green chilies in halves
  • salt to taste
  • 4 tbsp of sugar
  • 1 entire head of rohu fish cut into two halves
  • 3 tbsp of rice oil


Step 1

Take a kadai and deep fry rohu fish head (already marinated with turmeric powder and salt)

Step 2

Take a pan. Add oil and bring oil to hot flame. Throw onions and let them fry till they turn light brown.

Step 3

In a mixer grinder, make a paste of cumin seeds, tomato, garlic, ginger etc.

Step 4

Add the paste into pan. Toss ingredients together.

Step 5

Put in potatoes and snake gourd pieces. Saute everything well. Time to add fried rohu fish head pieces.

Step 6

Sprinkle turmeric powder, salt and sugar. Add a cup of water and put the lid on that vegetables get boiled evenly.

Step 7

Open the lid after 10 minutes and check if the mixture gets almost dried out.

Step 8

We are ready to it Snake Gourd vegetable with rohu fish as a delightful side dish with hot rice.
